It’s just offal

Nearly anyone — after a few tries — can grill a fillet mignon or a sirloin steak. A trained chimp can steam a lobster. But it takes love, and time, and respect for one’s ingredients to properly deal with a pig’s ear or a kidney – Anthony Bourdain

Eat Me Daily has another installment of “Offal of the Week” featuring five chefs who like the nasty bits. They serve items such as fried rabbit livers with pepper jelly toast, hogshead cheese with red mustard greens & fried pig ear salad, and fried alligator with chili garlic aioli. There are also links to past segments on chickens feet and beef tendon.

  • I don’t know how long WaterWatch has offered a Google Maps version of its data, but you might like it better. After nearly an inch of rain, the Bean is classified as Above Normal flow, as expected. Flow increased from about 30 cu. ft. a minute to 50.
  • llaerta_23b26_1068.jpg Someone has to do the dirty work. Rachel Sussman is offering her service in recording images of the oldest things in the world, such as this 3,000 year old item from a Chilean desert. There are some amazing, you’ll-be-glad-you-looked items located here. A blog about her travels is here.

Visit her other portfolios while you’re at the website. She certainly does get around – and to some very interesting locations.
